On the farms in South Tyrol, it is customary to cook dumplings at least once a week. This is also the case today at the Niederthalerhof: Farmer Brigitte lovingly prepares them for the whole family.
And, of course, also reveals the recipe.

Ingredients
- 150 g firm white bread or dumpling bread
- Onion (40 g), finely chopped
- 1 tbsp butter
- 2 tablespoons flour
- 80 g bacon, finely
- diced
- 100 ml milk or water
- 2 eggs
- 1 tbsp parsley or chives, finely chopped
- Salt
And this is how it’s done
Cut the bread, bacon, chives, parsley and onion into small cubes.

Sauté the finely diced onion in butter, add to the bread and mix.

Stir in the flour and bacon.
Mix the milk or water, eggs, parsley and salt, pour over the bread and mix well.


Leave the mixture to stand for about 15 minutes, then shape into dumplings.

…and simmer in salted water, half covered, for about 15 minutes.
…serve with coleslaw…
